In the U.S. alone, an estimated 133 billion pounds of edible food is wasted each year. While much of that waste may be beyond our control, the way you treat the food in your kitchen is.

Chef and food educator Maryah Ananda sees food as a lens for wellness, healing and sustainable practice. By treating the food you have as a precious resource, you can make the most of it, spreading your meals and dollar, while reducing your environmental impact.

So, once you’ve collected your scraps, what happens next? Maryah shares her three tips for conserving food in the video below, equipping you with the tools to build your own sustainable practice.

Three ways to use your fresh or frozen food scraps:

Making soup stock: add food scraps, spices and herbs to boiling water. Reduce to a simmer and let cook for two or more hours. Strain the soup to leave only the broth. From there, add any ingredients that fit your soup fancy and serve! Learn more on making stock on 

Create an aromatherapy bath: save your citrus peels and add them to a hot bath. Part 2: let the smell envelop you.

Use for composting: combine vegetable and fruit scraps with soil or dead leaves in a closed container with holes for aeration. Mist with water, and mix the contents 1-2 times a week. Leave for 1-2 months to let the contents fully decompose, then add to plants to fertilize.
